Eating in season from the garden can be a challenge this time of year, but one thing I was able to grow a large amount of was potatoes. I’m afraid I haven’t been eating them as much as I should be… probably because I feel a bit bored with my potato repertoire. So, last week I decided that I would challenge myself to eat more of the potatoes I grew. I pulled out several cookbooks and picked out a recipe from each. Of course, I’ve had to vary each recipe according to what I have on hand or in the garden, but did buy a few items to go on each.
I’ve blogged each of the successful meals (one was a total flop) and they are full of photographed tutorials. Here’s what I’ve made so far:
Potato pancakes with guacamole, refried beans and a fried egg (so far this has been my favorite)
And tonight I made tacos of potatoes, braised kale, poblano peppers, a side of refried beans, topped with homemade feta. The corn tortillas were freshly made. I will blog about this dinner tomorrow.
I’m going to keep trying new ways to eat my potatoes for the next month or two and will blog about each successful meal.
